This 400-square-meter facility, situated within the company’s production plant in Rome, is equipped with a professional kitchen, tasting rooms, and dedicated areas for professional meetings among industry operators. “We believe that training plays a central role in the hamburger supply chain, both from a production standpoint and in understanding raw materials. It is not a simple product, but the result of precise technical choices that directly affect taste, consistency, and final quality,” Galli emphasizes.

The Galli family’s butchery tradition dates back to the 1950s when brothers Augusto and Mario, apprentices at their uncle’s shop in Borgo Pio, opened the first family butcher shop. Their historical location in Via Gallia attracted an illustrious clientele, including legendary Italian actors Alberto Sordi, who favored veal and special cuts like pigeon, and Anna Magnani, who preferred red meat. Fabio Galli, a modern interpreter of this rich family heritage, continues to uphold the standards of quality and craftsmanship that have defined the Galli name for decades.
